Horsegram (கொள்ளு) and ragi (கேழ்வரகு) are two key ingredients in South Indian cooking. Both are a rich source of insoluble fibre, antioxidants, iron, calcium and proteins.
This recipe makes use of both horsegram and ragi to make quick afternoon snack to be enjoyed by everyone.
Ingredients:
- 1 ½ cups Ragi flour
- 1 small onion finely chopped
- 2 green chillies finely chopped
- 1 tsp salt
- 1/2 cup sprouted horsegram
- 1/4 cup water
- Gingelly (sesame) oil
Methods:
- Grind the sprouted horsegram into a coarse paste using minimal water and set aside
- In a large bowl, combine the ragi flour, salt, onion, chillies and ground horsegram and mix well to make a coarse dough.
- Add sprinkles of water 1tbsp at a time to the mixture to form a soft dough. Divide into 4 portions and set aside.
- Bring a medium fry pan to heat over high flame.
- Pat a portion of the dough directly onto the pan and apply sesame oil to the edges
- Give it 2 mins on side before flipping to cook the other side. Keep gently frying on both sides until it turns rich brown shade.
- Serve hot on its own or with a chutney.
